Family Camp Day 2013

It was a perfect autumn day for the Camp Riverbend Family Camp Day.  It was a little on the chilly side, but toasty in the sun, or bundled up in our Camp Riverbend gear!  Families who had already registered for the 2014 camp season were invited to spend some time with us this past Saturday, learning what campers do at camp all day.

Families arrived, anxious to dive into what we had to offer.  There was canoeing, a leaf pit, pumpkins to paint and decorate, lanyard to weave, individual apple pies to bake, ropes course, and gaga, of course!  It was great fun for the counselors and campers alike to catch up on what has been going on since camp.

The individual apple pie station was definitely a busy one.  We used a recipe adapted from a Pillsbury one.

Ingredients:

  • 2 refrigerated pie crusts, softened
  • 2 cups diced, peeled apples
  • 1/3 cup sugar
  • 1 Tbsp flour
  • 1 ½ tsp cinnamon

Directions:

Heat oven to 400 degrees.  Unroll pie crusts on a work surface and cut each
crust into quarters. You will have 8 wedged shaped pieces of dough.
Mix apples, sugar, flour and cinnamon.  Put a bit of this mixture on top of
a piece of dough, then fold the dough over the filling.  With a fork, crimp
the edges to seal. The filling should completely covered by dough.  Place on
an ungreased cookie sheet.  Cut several small slits in top to allow steam to
escape while baking.
Bake 15-20 minutes or until light golden brown. Cool until the pocket can be
safely picked up.  Enjoy warm or at room temperature.
For a special touch, brush the top of the pockets with water or egg white
and then sprinkle with cinnamon-sugar before baking.  Makes 8

Here are the measurements for one serving:

  • 1/4 pie crust
  • 1/4 apple, peeled, seeded and diced
  • 1/2 tsp of sugar
  • 1/2 tsp of flour
  • 1/8 tsp cinnamon
